I’ve been a foodie all my life. For most of my journalism career, I was a food and travel columnist for the Springfield News-Leader.  My work has appeared all over the country, including USA Today online and Weekend.

Food and travel have always been my passions. I ate my way around the157026_10150352587270206_2968809_n world (55 countries and counting) and savored every minute in the kitchen.  (That’s me in Ushuia before heading to Antarctica) .

In fact, when I met my husband, I told him cooking was my form of prayer.

Two years ago, I became a mom and my life changed. Instead of relishing cooking, dinner became daunting (many days, not all). I still love to cook, but I just don’t have as much time. I started buying rotisserie chickens, the modern-day convenience food, and I never stopped. Now, I am obsessed.  I am creating 117 recipes that start with rotisserie chicken and I’m sharing those recipes with other moms.

I hope this blog will turn into a cookbook, but if it doesn’t, then I’d still like to share my passion with other busy people.  I now use rotisserie chicken to simplify so many recipes, like Mexican Lasagna (one of my favorites); or salad or Chicken Marsala.

Yes, in due time, I will share every recipe. I hope you’ll join me on this journey.

    Where do you buy the soy vay in springfield I live in Joplin and none of the stores have it here

      Harter House sells it. I always buy it there. I THINK the Walmart Neighborhood market on E. Sunshine has it, too. But Harter House always has it and that’s a local store, so I try to buy from there. I will have another recipe this week using that sauce. It’s so AWESOME

      Thank you. I think my husband wishes I didn’t start this either. He’s had enough rotisserie chicken to last him a lifetime. But they are so convenient and healthier than many other alternatives.
